Produced by Edinson Argote at Quebraditas Coffee Farm in Huila, Colombia, this specialty coffee is grown at an elevation of 1850 masl. The farm operates with a focus on meticulous processing, including a unique passion fruit co-fermentation that involves a 72-hour period with specific yeast at temperatures below 25°C. This innovative approach is supported by rigorous quality control measures, such as ensuring a minimum of 90% ripe cherry during harvest and using mechanical drying at 38°C for 42 hours to ensure stability. By combining traditional Caturra cultivation with modern fermentation techniques, the producer is able to create highly specialised microlots for the international market. The final product is stabilised in specialised grainpro-type bags to maintain its unique characteristics and quality throughout the supply chain.
